Kitchen Manager - Medicine, Codsall

To apply for this position within our chef brigade you should be a quick thinking, creative person with great kitchen knowledge.

The ideal kitchen manager candidate will have a passion for culinary excellence, strong leadership skills, and the ability to inspire and mentor team members.

As kitchen manager you will oversee day-to-day kitchen operations. You will work closely with the company Exec Chef to ensure that food quality is consistently high at your site.

The successful candidate will have the skills and expertise required to:

  • Take pride in presentation & follow menu specifications 
  • Supervise and manage kitchen staff, including training, scheduling and performance evaluation.
  • Ensure high standards of food quality, consistency, and safety through proper food preparation and kitchen operations
  • Monitoring kitchen due diligence
  • Orders, stock takes and adhering to budgets
  • Keeping a well organised, clean & tidy kitchen

Schedule:

  • Weekends & Bank Holidays
  • Weekdays – Daytime hours only – Must be available between 7:30am & 5:30pm

The successful candidate must meet the following criteria, and be confident to complete the following responsibilities:

  • Assist the Exec Chef in the planning and performance of administrative tasks
  • Showcase excellent levels of delegation and strong leadership and management skills, with the ability to motivate and inspire team members.
  • Maintain proper maintenance of all walk-in coolers and storage areas
  • Monitor daily food production with hands-on control
  • Monitoring daily due diligence system
  • Managing ordering & stock takes

The following skills and qualifications are also a must:

  • Level 2 Food Safety
  • Allergen training
  • References will be needed from your previous places of employment.
  • Proven experience in a leadership role within a kitchen setting.
  • Ability to work effectively under pressure and adapt to changing priorities

Chef (CDP) - Codsall

To apply for this position within our chef brigade you should be a quick thinking, creative person with GREAT kitchen knowledge.

The ideal candidate will have a passion for culinary excellence and the ability to work well in a team in a fast paced environment.

As part of our kitchen team you will play an active part in day-to-day kitchen operations. You will work closely with the Head Chef to create dishes whilst always ensuring that food quality is consistently high at your site.

The role involves:

  • Following specs and adhering to set GPs
  • Maintaining a clean & organised kitchen, dry store & chillers
  • Following due diligence
  • Following basic food hygiene standards
  • Maintaining correct level of stock and prep
  • Keeping a fully stocked larder & saladette
  • Following prep lists, cleaning schedules & other tasks set by line managers
  • Keeping a fast pace kitchen
  • Taking consideration of presentation of food
  • Following Medicine staff policies inc. uniform, absences, latenesses, sickness

The successful candidate will have the skills and expertise required to:

Artisan Baker - Chubb Building, Wolverhampton

At Medicine, we use traditional baking techniques so Lamination skills are essential.

The successful candidate will have the skills and expertise required to:

  • Prepare and bake a variety of artisanal bread, pastries, and baked goods using traditional methods and high-quality ingredients.
  • Develop and refine recipes to create unique and flavourful products that appeal to customers.
  • Maintain high standards of quality and consistency in all baked goods, ensuring they are visually appealing, flavourful, and freshly made.

Schedule:

  • Weekends
  • Weekdays (Mon-Fri)
  • Early hours will be required as standard

The successful candidate must meet the following criteria, and be confident to complete the following responsibilities:

  • Prepare and bake a wide range of artisanal bread, pastries, cakes, and other baked goods from scratch, following traditional recipes and lamination techniques.
  • Measure and bake ingredients accurately to ensure consistency and quality in the finished products.
  • Decorate and finish baked goods with fillings, toppings, and glazes as required.
  • Conduct regular quality control checks to ensure that all products meet our standards for taste, texture, and appearance.
  • Maintain a clean and organised workspace, including cleaning baking equipment and utensils, and disposing of waste properly.
  • Follow food safety regulations and guidelines to ensure the safety and hygiene of all food products.
  • Stay updated on industry trends and new techniques in artisan baking, and incorporate new ideas into our product offerings. Collaborate with business owners, exec chef and head baker to develop new recipes and products, and contribute to menu planning and product development.
